Oven-grilled Chicken Wings

>> Aug 8, 2011

We had some nice chicken wings last week. These yummy snacks were so popular, we had to wait 40mins for just 3 BBQ wings at the local hawkers center! There's a long queue for these in most places.

So, I decided to make our own… and it’s not too difficult.

6 chicken wings
2 ½ - 3 tbsp light soy sauce
1 tbsp maltose
1 tsp ginger juice
1 tsp chilli sauce (optional)
A dash of pepper
Some honey for brushing

1.      Remove all stray feathers, if any, wash, clean and pat dry wings.
2.      Marinate for 8 hours or overnight in the fridge
3.      Remove and drain
4.      Arrange the wings tips in a row in the center, on a greased wire tray with the underside up,

5.      Cover the wing tips with aluminium foil to prevent burning
6.      On the lower rack, set an aluminium foil lined baking tray to catch drippings

7.      Grill the wings at 180C for 20-25 mins till wings turn light golden brown.
8.      Turn the wings over, grill for another 15 mins or so till golden brown, brush some honey and grill for another 5mins

9.      Turn over, brush some honey and grill till golden brown

Enjoy the yummy wings, warm with some chilli sauce.

wow you really put a lot of effort into the presentation of this dish! they look very restaurant/cafe-style! i also like my chicken wings grilled this way, but i use honey instead of maltose.. is there much of a difference?

@kitchen flavours
Yes! yes!

@Shu Han
Thank you. You can use either maltose or honey in the marinade. Honey is sweeter and maltose, thicker gives a sticky sweet taste but difficult to brush on while grilling.
