Pork Ribs Curry with Kaffir Lime Leaves

Spicy and tender pork ribs in fragrant kaffir lime leaves curry gravy…appetizing!




500g pork ribs
5 pips of garlic
12-15 shallots
2cm ginger
4 tbsp of vegetable oil
2 tbsp curry powder (I used Baba’s)
1200ml water
200ml thick coconut milk
5 pcs kaffir lime leaves, remove hard stem in center, cut into very thin strips
Salt, to taste

1.   In a pot of boiling water, blanch pork ribs for 5mins. Drain.
2.   Blend garlic, shallots and ginger.
3.   Heat oil in wok, on very low flame, stir-fry blended ingredients for 5mins.
4.   Add in curry powder and stir-fry for 15mins till fragrant.
5.   Add in kaffir lime leaves and pork ribs, turn up flame, give it a good stir.
6.   Add in water, let it come to a boil.
7.   Turn down flame to medium low and let it simmer for an hour. Add in more water if it dries up.
8.   Add in coconut milk and continue to simmer for another 10mins.
9.   Salt, to taste.
10. Turn off flame and dish up.

Garnish with a few more strips of kaffir lime leaves.

Serve with hot steamed white rice.

Please adjust spiciness if serving kids. The above is just fine with my little one.
