Snow Fungus Tong-sui

Chinese, especially Cantonese love sweet soup or tong-sui.

This is a simple recipe with lots of nutritional benefits. It only needs 5 ingredients, nothing too complicated.




For 4 pax
1 pc of snow fungus
10 pcs dried Chinese red dates
8 pcs gingko nuts, peeled
12 pcs dried longan
2-3 tbsp rock sugar (to taste)
1.5 litre water

1.   Wash and soak snow fungus in water for 30mins. Once soften, using a sharp scissors remove the inner hard core.
2.   Crack all the gingko nuts, remove hard-shell, and peel the brownish skin. Remove the small tiny greenish nub (some call it embryo)
3.   Bring water to boil, add in in red dates, dried longans and gingko nuts. Boil for 30mins.
4.   Add in snow fungus and boil for 15mins.
5.   Add in rock sugar and boil for another 5mins.
6.   Turn off flame and serve warm.
