Simple sponge cake

Light, soft and fine texture, that’s what I like about Sponge cake. It’s the very first cake I tried baking when I got my oven.

Looking back…it’s not an easy cake to begin the journey into the world baking as compared to the traditional butter cake. Strangely enough, I was not deterred by the difficulty. I kept trying to improve and kept reading up on the tips.

And, so… my lovely supportive family had to endure the 3 sponge-cake-sessions a week! Feeling guilty, I added different flavours to create varieties!

Santa's Fruitcake

A Christmas fruitcake



I have a 20 year-old recipe shared by an elderly aunt. I've been making this fruitcake for the last 6 years for Christmas and Chinese New Year too.

It's not complicated, not too sweet or oily but flavourful and colourful. Don't worry if you don't have rum, I used brandy here.

Coffee Cake

I enjoyed this Christmas very much probably because I baked more than I did the previous year. I injured my arm in late 2008 but have since recovered, somewhat. Hehehe...I enjoyed probably because I ate a lot too the past few weeks. Oh my, it's going to be tough with Chinese New Year barely 5 weeks away... how can I resist the festive food?


Here's some of the Xmas stuff... mouth-watering stuff! I made 2 small 6” cakes and presented 1 to my friend for Christmas this year. A white cream cake with chocolate & strawberries are normally kids favourite. I think I didn’t do too good a job on the decoration but we love the chunky & tart strawberries and chocolate combined with coffee sponge cake.

Sponge Cake
1 packet sponge-cake mix 250g
Eggs, water and melted butter, please follow instruction per packet
1 tsp of mocha or coffee paste

Topping & Cream filling
2-3 tbsp of ice-cold water


100g strawberries, hulled and cut into small chunks
75g dark chocolate
2 tbsp double cream
2 tsp of butter
1-2 tsp fresh milk











1.      Prepare sponge cake as per instruction. Beat all ingredients in a mixing bowl till soft and fluffy. Add in mocha paste and continue beating till well combined.
2.      Pour in (2 x 6” round pans) or 1 pan of 9”. Lined bottom with baking paper and lightly grease the sides.
3.      Bake at 180C for 35-40 minutes till golden brown and when the cake has pulled slightly away from the sides of pan.



4.      Remove from oven, gently remove from pan and set to cool on wire tray.
5.       Once cooled, chill in the fridge while we set to prepare the whipped topping and chocolate fillings
6.      In a double boiler method, melt chocolate, cream and butter, stir till combined, add milk little by little. Let cool, thicken slightly but enough for spreading & piping but not harden at all.
7.      Whip Topping : Beat whip topping and iced water, in a chilled mixing bowl and beater, till lines start appearing. (Do not overbeat)
8.      Remove the cake from the fridge and slice across into 2 layers.
9.      Decorate with cream, add strawberry chunks and melted chocolate, as desired. Or, you can add chocolate shavings too.

Mocha Cupcakes

I have this ‘thing’ to try coffee-something… hahaha, no, I’m not pregnant! Just a yearning to make some stuff with coffee or coffee-flavoured something-something. It’s not a stress thing, it’s the year-end, Christmas is coming, New Year is coming and my “Bosses” are also in holiday mood, as I am… J



While browsing the net, this gorgeous looking cupcake from MyBakingAddiction.com caught my eyes and I just knew I gotta try. If you check up Jamie’s site, you’ll know what I mean…all the cupcakes are just so yummilicious-looking. Thanks Jamie - your pics got me craving for more...hahaha!

Cheesecake Saturday...

It was raining again :-( after a couple of days hot-hot sun. Grey skies and feeling a little restless...I'm getting it from Max!

So, instead of staying home watching the rain drumming tit-tit-tat-tat rhythmically on the polycarbonate skylight and playing a game of chinese chess, we went for afternoon tea minus the tea...that is we had a afternoon with an espresso.

One of the best cheesecake in town, Secret Recipe,  Ooooo....absolutely yummy! Of the 3 flavours, I like Espresso Cheesecake the best, it's firm and rich with very strong aroma of espresso. The Blueberry is a bit too sweet for me and the Oreo is creamy and quite light & fluffy, almost mousse-like.

I managed to capture these delightful slices just before crumbs were all that is left ! What a cheessssssy afternoon...dinner was just a salad after a very satisfying & so filling tea-time.

Red... Strawberry Mirror Cheesecake

Yay! I did it this time! J


I got the taste and texture right this time…hubby and the little prince both love it too. My lucky neighbours too!

I worked on it late last night and it’s well worth it. As I unmoulded it just now, I was a little apprehensive something might be wrong… the last time I made it…it was a real failure! I was worried it might be too runny, won’t set, strawberries floating or… or something. Luckily it looks almost perfect, the red strawberry-flavour jelly is very pretty looking and strawberries weren’t too tart.

Grandma’s Birthday - Cappuccino Cake

This is the cake I made for my Mom’s birthday over the weekend. It’s a light and fluffy aromatic cappuccino sponge cake, frosted and topped with chocolate shavings.



Something is missing… I know, some big juicy strawberries would be great to complete the picture! I didn’t have time to get any. Mom love it, the kids love it, the family love it, despite the missing piece.

I had planned on getting some chocolate design.... but it's one of those..."when you rush-when you are short on time-when your kids needed your attention...." well, something like that. So this is the end result! Sigh!

Mocha Cream Cake

It's Monday... I seem to see everything 'blue'... he-he-he...I needed my second cup of coffee fix this afternoon to get me thru' to the rest of day or rather the afternoon.

Things look a bit perky juz now as I had coffee with a thin...well, not so thin slice of Mocha Cream Cake. Somebody was so kind to share with me a triangle piece of cake ...



and I was just wondering about the calories loads...... ..eeeeekkk, now, this is in addition to the mutton rendang, chicken curry, biryani rice, dhall, coconut candies and other sweets I had over the Diwali weekend.

Dark Chocolate Cake for Diwali

Diwali or Deepavali in Sanskrit which means a row of lamps is celebrated by the Hindus. Here in Malaysia, we call it Deepavali, but recently the term Diwali is used widely, it means also a Festival of Lights. Many will return from near and afar to the family home to gather for family dinner either to their parents home or grand-parents home.

I usually will visit a few Indian friends on Diwali on their annual “Open House”, the same as I did visiting Muslim friends during Hari Raya Aidil-fitri and Chinese friends on Chinese Lunar New Year, something I have been doing since school-days. 

The hosts will be decked in their traditional fineries, punjabi suits, beautiful & colourful silver-threaded intricate designs, shimmering sarees. A Kolam, is sometimes made at the entrance which is a pattern made using colour-dyed rice grains, which brings spiritual and symbolic meanings. Some believed that the Kolam will invite the Goddes of Wealth, Lakshimi into the family home. I’ve seen one beautiful Kolam at Ikano Power Station (shopping centre) last weekend.


Guests are treated to a sumptious feast with tempting arrays of spicy chicken curries, mutton rendang, papadum, biryani rice, acar, dhall and some traditional sweets and snacks like ever-popular murruku, ladoo, coconut candies and barfi and some modern ones like cheesecake and pineapple tarts.

This year has been very special as it is the first time I’m meeting my friend after having found her through Facebook recently. We lost touch right after school… both of us were in the same Kindergarten and same class right up to High School… (sigh!), if only Facebook was available then. Never mind... we have finally met up… we have matured, we have aged, we have wrinkles, we have spare-tyres (they were over-shadowed by our hugs n excitements) we have lots of catch up on, our career, families and other schoolmates… We cried a little as we met face-to-face for the 1st time. No, it didn’t ruin our mascara. We just merely soaked up some tissues only. :-D

I thought I’ll bring a small little gift from My Kitchen. 




This is what I made for a very dear friend, Dark Chocolate Cake.


200g butter
190g sugar
180g flour
50g cocoa powder
3 eggs
½ tsp baking powder
½ tsp baking soda
1 tsp vanilla extract
1½ tsp instant coffee granules dissolved in 2 tbsp boiling hot water (Optional)
200ml low-fat milk

Satiny Chocolate glazing
60g dark chocolate
30g butter
40g icing sugar
3 tsp whipping cream (warm)
1-2 tsp milk

I’ve been making this chocolate cake for many years for family, friends, birthdays, pot-luck and it’s well received as it’s moist. With the thick chocolate glazing, it’s really chocolate lovers’ cake, rich and chocolatey and perhaps a hint of coffee to bring out the strong chocolate aroma.

Line the base of an 8” round cake pan and light grease & flour the sides. Beat butter with sugar till light and creamy. Beat in 1 egg at a time and add in vanilla extract and cooled coffee mixture. Gently fold in the sieved dry ingredients alternating with milk, ending with dry ingredients. Pour into the pan and bake at 160°C for 1 hour.
It’s ready when cake skewer comes out clean.
Remove from oven and let cool for 10 minutes and then set out to cool completely on wire tray.

For the glazing, sieve icing sugar into a small pyrex bowl, add in dark chocolate and butter. Pour in warm cream and stir till combined. Place the bowl in a warm water bath, stir chocolate mixture till well smooth. Slowly add milk to the mixture so the chocolate mixture can spread quite easily enough.


To decorate, ensure the cake surface is smooth and flat. Using a long serrated knife, slowly cut or shave across to get a level surface. Spoon chocolate glaze on the cake and slowly let it spread, and let it over-flow down the sides. Gently use a small plastic spatula to smooth the sides.

Decorate as desired with colourful sprinkles or stars or freshly toasted and chopped nuts.

Chilled Mango Cheesecake

Mango, a well-liked tropical fruit familiar to many.

It’s the mango season here, an aromatic tropical fruit. I love mangoes and their many varieties, the honey Chokanan (Thai’s Chauk-Anan), Elephant tusk (Thai’s Nuen Jan), Water lily, Alphonso (India’s) and the local Apple mangoes. I like it fresh, dried, juiced, in salad, in ice-cream, in sherbet, in pudding and in smoothies too.

It’s so juicy, sweet and the taste depends largely on the species, some with a tinge of sour, some has whitish flesh or pale yellow, yellow or orangy. I can even eat 2 mangoes for lunch on some days.
