Orange Chocolate Chip Muffins

Here are some good looking polka-dot muffins which will delight little kids, and adults too!
These muffins are moist, tender and not too sweet. As suggested I added more orange zest. I used the zest of 3 oranges as that’s all I have in my fruit basket. The chocolate chips will provide the needed ‘sweetness’.
I like the strong citrusy orange aroma… mmm…it’s wonderful! Chocolate chips and orange make good partners in crime, I mean they pair well. :-)
These muffins were gone in a jiffy!
The recipe is adapted from here, with minor modifications,
225g all purpose flour
90g caster sugar
2 teaspoons baking powder
½ teaspoon salt (omitted, as I used salted butter)
120g unsalted butter (I used salted)
120ml fresh orange juice
¾ cup mini semisweet chocolate chips (I added more than that, including sprinkling on top)
2 eggs
grated zest of 1 orange (I used all 3 medium-size, left in my fruit basket)

- Preheat the oven to 190ÂșC and grease 12 muffin cups.
- Sift flour and baking powder in a large bowl. Add sugar and chocolate chips and mix well.
- Melt butter. Remove from heat, let it cool.
- Stir in orange juice, eggs and orange rind into cooled melted butter.
- Stir liquid into dry mixture and mix till just moistened.
- Spoon into muffin cups and bake for 15-20 minutes or until done
(makes 11 medium-size muffins)
I like making muffins into medium and small size suitable for small hands especially for snacking. And, of course less guilt… making me think twice before reaching for another. ~_^
