Strawberry Muffins

and school snack box gets more interesting this week with these fluffy muffins.
I tried these muffins after having read the good reviews and adapted slightly.
Daily snack of bread with jam spread, peanut butter, nutella, ham-eggs is
getting boring and "uncool" as I was duly informed by the little one…sigh!...oh,
the fussy one :-)
As strawberries are his favourite and his Dad's, I decided to make some Strawberry Muffins.
Here’s a good
basic muffin base
250g plain
flour
3 tsp baking
powder
½ tsp salt
(I used ¼ tsp)
150g caster
sugar (I used 130g)
1 egg
¼ cup
vegetable oil (60ml)
1 cup milk
(I used low-fat UHT plain milk)
1 tsp
vanilla extract (I added this)
Fresh
strawberry, cubed to small chunks
¼ cup white
chocolate chips and another ¼ cup for the toppings
This recipe
yields 12-13 medium-size muffins
1.
Pre-heat oven to 205°C (I set mine to 200 °C)

Sift all dry ingredients in a large mixing bowl.
3.
Stir in strawberry chunks and chocolate chips, making a well in the center.
4.
Beat egg and add to milk, stir in oil and
vanilla in a measuring cup
5.
Pour wet ingredients into the dry.
6.
Stir gently till just moistened, do not over-mix.
7.
Spoon batter into paper-lined muffin pan, top
with some sprinkling of chocolate chips
8.
Bake for 25 mins, or till golden.
The fresh
strawberry used is slightly tart and is sweetened by the white chocolate chips. The muffin is not too sweet as I reduced the sugar amount but is balanced with the additional chocolate chips, is quite fluffy and I enjoyed one with a cup of coffee.

This looks yummy! I wanted to make strawberry muffins a couple of days ago, but forgotten to buy strawberries on my grocery shopping trip to Tesco! Ai-yah, that was on my shopping list, but still missed on that! Getting old! :)
Strawberry muffin will just have to wait, I'm craving for some right now!
